Regional Italian Recipes: LAZIO

The cuisine of Lazio, unlike other regional culinary traditions, has maintained its own unique characteristics that can be traced to ancient origins, including some slight influence by the Jewish community.

GNOCCHI ALLA ROMANA

This Roman-style gnocchi aren’t the usual potato, ricotta, or squash kind. These flat semolina gnocchi can be prepared ahead of time and can make for a great vegetarian main. Take home what you make and enjoy a tasting of this delicious pasta, accompanied by puntarelle or chicory salad. Presented by Caterina Maurantonio Blanco. Limited capacity. Must register in advance and prepay. Members $50 – Non-Members $60.
