Traditional Italian Recipes: Cartellate

Cartellate are a traditional Christmas culinary tradition in Puglia. These are strips of dough, rolled out paper-thin (this is where the name comes from: carta = paper). The strips are then arranged into elaborate rose-shaped pastries, which are then deep fried in oil. Drained, they are then drenched in vincotto, a cooked-down, wine-based syrup. Must register in advance and prepay. Members $50, Non-Members $60.
