Traditional Italian Recipes: Orecchiette Pugliese Style


The little ear-shaped pasta, orecchiette, is made by rolling the dough into a long cord, which is then cut into half-inch discs, the disc is flattened with the thumb and turned to make the “little ear shape.” Have fun while learning how to make this particular kind of pasta and taste some traditional orecchiette dishes. Must register in advance and prepay. Members $50, Non-Members $60.
