Tasting Perú Festival & Expo to Take Place in Rye Brook, Pachamanca with an Inca Ritual

The Pachamanca (earthen oven), a well-preserved traditional food of the Incas, will be presented in its original style – a stone oven will be used to cook the meat and the traditional food and the Pachamama, an Andean ritual with music, will be performed to offer tribute to Mother Earth.

Among other food,  roasted beef known as “Carnes al Cilindro” will be served.  The dish incorporates a new Peruvian technique that deviates from the traditional method of barbecuing. It offers a new flavor to the roast and will be presented by a Peruvian chef.
